70g dates

60ml milk

1 tbsp vinegar

130g brown sugar

10g treacle

30ml egg white

125g flour

½ tsp bicarb soda

Toffee Apple Caramel Sauce
- 90g butter
- 1 large apple, peeled and diced
- 180g dark brown sugar
- 125ml cream
Method:
- Remove pits from dates and finely chop. Heat the milk, then pour over the dates along with the vinegar. Set aside to soften.
- In a mixing bowl, cream together butter, brown sugar, and treacle until light and fluffy. Beat in the egg white for 1 minute, then stir in the softened dates.
- Sift the flour, bicarb, and baking powder over the wet ingredients, then fold everything together until well combined.
- Divide the pudding mixture between 6 greased non-stick pudding pots.
- Select Bake on your Vortex (or air fryer) at 160°C for 18 minutes. Place the pudding pots in the air fryer when prompted.
- While the puddings cook, make the caramel apple sauce: heat butter in a pan over low heat, add diced apples, and sauté until slightly softened. Add brown sugar and cream, stirring until the sugar dissolves and the sauce thickens.
- When puddings are done, prick them with a toothpick and spoon some caramel sauce over each, reserving apple pieces for the top. Before cooling, turn the puddings out onto a serving plate.
- Drizzle with more caramel sauce, top with sticky apple pieces, and sprinkle with pecans if desired.
