Speedy Citrus Salmon

Need a quick, healthy dinner or a meal to impress? Try this baked salmon recipe! It's also great for leftovers. 

Ingredients: 

  • 750g Salmon fillet
  • Thumb size (8g) piece fresh ginger, peeled
  • 1 clove garlic  
  • 40g butter, softened
  • 1 tbsp Sri Racha  
  • 1 lemon
  • 1 orange  
  • Your favourite sides for serving (see ideas below) 

Method:

  1. Add the butter to a bowl. Grate in the garlic, the peeled ginger and add the Sri Racha. Add the zest of the orange and the lemon. Mix the butter together, then season with a pinch of salt and pepper
  2. Preheat the air fryer. Close the basket, select grill, set the temperature to 205C and the time to 8 minutes.  
  3. While the air fryer preheats slice the orange. Once hot work quickly, add the orange sliced to the air fryer basket. Place the salmon on top, smear the butter over the salmon. Place the basket into the air fryer and grill. After 8 minutes, the salmon will be slightly underdone in the middle and flakey on the outside. Alternatively, if you like it cooked all the wat through leave it for an extra 2 minutes.  
  4. Time may vary slightly depending on the thickness of your side of salmon. Adjust the timing as necessary for your preference (don't remove this, its important)
  5. Once the salmon is ready, remove it from the air fryer and serve with your remaining lemon, cut into wedges and your favourite sides*. Here are a few suggestions
    • Option 1 Brown rice and a simple salad, of cucumber tossed with salt and Lee Kum Kee chilli oil or Lao Gan Mar chilli crisp for a simple but fresh addition to your salmon. You could also pair this with some steamed broccoli.
    • Option 2: Boiled baby new potatoes, with herby garlic butter, and steamed broccoli.

*Chefs tip: Don’t clean your Air Fryer straight away! Save the delicious butter which has collected underneath. Remove the grill and pour the citrusy butter over the salmon and/or your veggies and sides and serve.
