Ingredients

  • 2 tbsp oil
  • 1 kg beef brisket joint
  • 1 large onion
  • 2 garlic cloves
  • 2 tsp salt
  • 1 tsp freshly ground black pepper
  • 1 tsp turmeric
  • 1 tbsp garam masala
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp smoked paprika
  • 250 ml beef stock
  • 250 ml passata
  • 1 tsp lemon juice
  • 1 tsp brown sugar
  • Serve with… your choice!

Instructions

  1. Select Sauté on the Instant Pot and adjust the time to 4minutes. Once the pot starts to warm up, add 2 tbsp oil.
  2. Add the beef joint and brown on all sides then remove from the pot and set to one side.
  3. Add the onion, garlic, spices, beef stock and passata into the Inner pot, and use a wooden spoon to deglaze the base, then press Cancel.
  4. Place the metal trivet into the sauce in the inner pot and put the beef joint on top.
  5. Secure the lid, and select Pressure Cook on ‘High’ and program for 90 minutes.
  6. Once the program has finished, perform a quick pressure release and when the valve drops, remove the lid.
  7. Remove the joint and the trivet from the inner pot and place onto a chopping board. Using 2 forks, shred the beef.
  8. Once shredded, place the beef back into the inner pot to combine with the sauce, and keep warm until ready to serve.
  9. Serve with your choice – whether that’s rice, potatoes, naan bread – whatever you fancy!
