Sweet, salty, hot and crispy, these skewers are a 15-minute wonder. You can keep them vegetarian or wrap the halloumi in pancetta or speck for a savoury, frizzled finish. Either way, the hot cheese + cold melon + sticky honey = magic.
Ingredients:
- 1 x 250g block halloumi
- ½ orange melon (such as cantaloupe)
- 8 slices pancetta or cured speck (optional)*
- 1 tbsp honey
- Pinch of chilli flakes (optional)
*These skewers can be made with or without (vegetarian) pancetta. Do a mix for a tasty assortment suitable for meat eaters and veggies alike
Instructions:
- Cut the halloumi into 8 chunky batons.

If using pancetta, wrap 4–8 of the halloumi pieces in a slice each, depending on how many you want with meat.

Skewer each piece of halloumi onto a cocktail skewer or small wooden stick, pushing it down towards the base so there’s room for melon later.

Air-fry at 190°C for 4–5 minutes, or until the cheese is golden and the pancetta crisp.

While it cooks, deseed your melon and use a melon baller to scoop out 8 neat balls. No baller? Just cut into chunks roughly the same size as the halloumi.

Once the halloumi is cooked, remove from the air fryer and press a melon ball (or chunk) onto the top of each skewer.

Drizzle with honey, sprinkle with chilli flakes if using, and serve immediately while the cheese is hot and the melon still cold.
