Elevate the humble shop bought chicken shnitzel with this tasty take on a Chicken Ceasar! Serves 2 in just over 20 minutes, this delicious dish combines perfectly breaded chicken breasts with crisp gem lettuce and a creamy yoghurt based Caesar dressing. Drizzle the zesty dressing over the crisp gem lettuce, sprinkle chopped chives, and savor the mouthwatering flavors. A delightful dinner that's easy to make and a guaranteed hit with every bite!
Ingredients:
- 2 Breaded Chicken breasts
- 2 little gem lettuce
Caesar dressing
- 100g yoghurt
- 25g parmesan
- 2 tsp Lemon juice
- 1 tsp Dijon mustard
- 1-2 anchovies (optional)
- ½ clove garlic
- 1 tsp Worcestershire sauce
- 1 Tbsp Mayonnaise
- Oil, salt & Pepper as needed.
Method:
- Air Fry the breaded chicken breasts at 180C for 6-9mins. (The time will vary depending on the size of the chicken breast, but use 6mins for small – 9mins for larger as a general rule.
- While the chicken cooks, separate the lettuce into leaves. Then make the dressing by combining all the remaining ingredients and blending until smooth. Pour the dressing over the salad leaves, then toss the salad together.
- Remove the cooked crispy chicken from the air fryer basket, and slice and serve on top of your salad with the chopped chives.
